Penne Pasta and Chicken Parmesan: It's Sunday Dinner on a Friday Night!


This was the unexpected dinner.  I asked my daughter what she wanted for dinner?  Sofia always says Pasta like Nonna's (Grandma in Italian).  I thought momentarily if I even had some tomato paste, the right seasonings and everything to make the sauce someone close to my mom's sauce (which may I add, can never be duplicated).  So I decided why not, it's been awhile since I've made homemade sauce.  I know it's crazy sounding.  I used to make sauce all the time.  Life has got more busy and I found a really great jarred sauce that was a close substitute and was actually quite on the money for being close to Authentic Italian Flavors.  It's called MIDS, I would never use Prego or Ragu.  Italian Language Lesson:  Prego means "You're Welcome" in Italian.  Silly name for a Pasta Sauce.

If some of you don't recall, Prego used the tag phrase "It's In There", hence the name of my blog.  Why I chose that name is because of the connection of pasta sauce and my life, It's In There....  The ingredients like the herbs and spices of sauce are many and so does include the ingredients of the makeup of life.  We have our own ingredients that make up our lives, so I though,t It's In There was a good connection.  Hopefully that phrase isn't copywrited, lol!

I grew up with my mom making sauce pretty much everyday especially on Sundays.  Sundays consisted of a huge dinner though.  It was the only day that we were all together.  Everyone worked, had school or had something going on.  So Sundays were a big deal.  I think that's why Sunday dinners are so known for Italian Culture in Italian Households.  It was our feast, our celebration of togetherness.  It was the only time my siblings and I were probably not fighting...lol!  Also we never started eating until dad sat down and it was always an early dinner usually around 2pm.  Now that we are all on our own it was hard to make it to Sunday dinner and eat at 2pm.  Our dad would be so frustrated.  My dad has been passed for 2 years now and Sunday dinners have slowed down.  His passing took a toll on all of us and Sunday dinners aren't the same without him and also now my brother is in Iraq.  So it's been just a bit of a black cloud over us with everything.  I think though honestly when my brother does come home, I think things will be better especially for my mother.

To put a Halloween twist to this story, I have to tell you a little freaky situation.  When my brother was home and wasn't leaving for Iraq yet, we had Sunday dinner.  We all pretty much sat at the same chair when we ate dinner.  My dad always sat at the head of the table.  The chair was empty and then my brother sat in it with the frame of mind that he was now the man of the family (he's the only boy).  Well it was awkward and honestly I didn't think it should of been occupied.  Maybe it was a way for my brother coping.  Who knows.  Well I said to him that I didn't think it was right for him to sit in dad's chair, he ignored me and just didn't think anything of it.  About a half hour later my brother and I talked about it again and I was heading to the kitchen. My brother stood up to do something and the chair flew out from under him like someone was throwing it out from under him.  I laughed and said, "See even dad doesn't want you sitting in his chair!"  My brother looked like he saw a ghost!  I was just about to tell my mom what happened and my brother said, "No, don't tell mom!"  I didn't at the time but I eventually did.  She didn't seem surprised.  We think in a sense that my dad left such an imprint in our lives and in the house we grew up in that we feel sometimes his spirit is in the house. If you knew my dad, you'd understand and it would of been a trick he would of pulled on my brother.  Now you are probably wondering if my brother has sat on that chair ever since, yes, when he came home for a break from Iraq, he sat in the chair.  Nothing happened but I think my brother has a sense of respect for the chair now.  LOL!  That story always gets me!  I laugh hysterically everytime!  That's my Daddy!

So now on to the whole point of this blog.  Don't we all get sidetracked!  When I decided to make sauce I figured should I do more?  I knew I had chicken breasts and was all set for making some Chicken Parmesan. Which is my husband's favorite.  Now maybe in a sense I made it because I knew he would be surprised but honestly I think I just wanted to make it.  I had hoped maybe it would put a smile on Scott's face but I didn't really mind if it was no big deal even though I know it's his favorite food.  I think though it was more for the fact of me going, Blah blah Scott, I made it now you can feel guilty for being a punk sometimes.  Now in marriage to say it's perfect is imaginary.  Fairytales don't exist and if someone goes into it thinking so, they will highly be disappointed.  I don't care everyone has their down days.  I am no different.  Wish it wasn't true but it is for all in every type of relationship.  I know many wouldn't admit it or some may pretend but I live in a very realistic world.  LOL!

It was nice though to sit down as a family be grateful and thank God for blessing us with what we have.  After all that's what the feel of Sunday dinner brings to us.  That is why I say it was a Sunday dinner on a Friday night!

Chicken Parmesan, is yummy.  It came out great for me.  It had been awhile but it all came back to me.  The starter for every Italian tomato sauce is Onions, Garlic and Olive Oil.  That is what I always remember smelling when my mom would begin her sauce.  It was a smell you knew and knew what was coming.

I used tomato paste, tomato sauce and crushed tomatoes.  I had to make a lot of sauce for the Chicken Parmesan and I wanted to have some left over because my daughter could eat pasta everyday.  I grew tomatoes myself in the past and nothing beats using tomatoes from the garden.  My dad had his own vegetable and herb garden.  It was huge and he tended it like it was a baby.  We never bought vegetables at the store unless it was something specifically needed that you couldn't grow yourself in Ohio even though my dad could make fig trees grow in our backyard.  He eventually stopped a little bit after he became diagnosed with cancer.  My parents had so many tomatoes I remember my mom jarring tomato sauce and making sun dried tomatoes.  Technically they oven dried them, not much a sun dried area here in Cleveland, Ohio.  So they used the next best thing, the oven.  Now making dried tomatoes stinks up the house.  How I didn't like being in the house when they made them.

So to make this Chicken Parmesan is quite easy.  It's a little time consuming but not so much if you use jarred sauce.  This time I made my own.

This is what you need:

Skinless Boneless Chicken Breasts (usually big breast is a good serving)
Italian Seasoned Bread Crumbs
Freshly Grated Parmesan Cheese
1 Egg Beaten
Shredded Mozzarella Cheese
Cooked Pasta
Crushed Tomatoes or Tomato Sauce
Tomato Paste
Onions
Garlic
Italian Seasoning
Garlic Powder
Salt
Pepper
Oregano
Basil
Parsley

Make your sauce or buy jarred sauce.  This is how I make mine....

I start off sauteing 1 whole onion, some minced garlic with some olive oil in a sauce pot.  This is how my mom starts every sauce.


Add a regular can of Tomato Paste


Add about a can and a half of water and add your 2 big cans of Tomato Sauce, then start adding the above seasonings, how much depends on your taste, just add as you cook the sauce whatever is needed....


Cover and Simmer on low.  You can taste test it and add the seasonings you think it could use more of such as garlic powder, oregano, etc...  Stir occasionally....


While sauce is cooking:

Beat an egg in a bowl and pour Italian Bread Crumbs in a separate bowl, (I will add some Parmesan Cheese to the bread crumbs but not too much).



Dip Breast into beaten egg then into bread crumb mixture.  At this point you can bake your chicken breasts at 350'F until thoroughly cooked or you can pan fry them like I did in this next photo:


Cook each side until golden brown and cooked through, not too worry as it will be thoroughly cooked in the oven.


Take a baking dish and slather some tomato sauce and place all cooked chicken breasts on top of sauce.  Layer sauce on top of Chicken Breasts and bake in oven for about 15/20 minutes.  Take baking dish out and layer shredded mozzarella cheese on top.  The heat of the already baked chicken will melt the mozzarella cheese.  This is when I cook my pasta.  You can make any pasta you like, I used Penne this time.

If you don't want to fry your chicken breasts like before mentioned, you can bake them in the oven, do the layering process and bake until cheese melts on top which should only be a few minutes.  Sometimes you can place your pasta on the plate, place your breaded chicken breast, ladle sauce and sprinkle mozzarella cheese on top, this will skip the whole baking process.

The kids loved this dish including Scott.  It's nice to make your own sauce but when I do use jarred sauce I love to use MIDS jarred sauce.  I think they are the best out there right now commercially.

This was my plate and it was so yummy!  I love a lot of cheese.  Here it is topped with Parmesan Cheese....  YUMMY!  I was so full after I ate it.  But it was so gooooood!

Dinner 9/28: Breaded and Stuffed Pork Chops


Let's start off saying that I HAVE TO GET a new Camera.  My point and shoot Nikon digital camera just isn't cutting it for these blogs and food presentations.  So any suggestions on a good camera is well appreciated.  I fear that it's going to be an costly investment.  My mother in law has a good camera but I am sure she wouldn't want to come over to document my recipes....

I have been meaning to make stuffed pork chops.  This fascination with them at how great they always looked.  But I was scared because pork can get really dry really quick.  Also what if the middle didn't cook, what if the stuffing was not heated through.  So many things could go wrong and I didn't want my husband to be disappointed.  I would eventually get over the failure but he would from time to time remind me of it and probably not encourage me to try again....  LOL!

So I pondered it.  What can I do that would help not to dry it out?  So this is what I did.  I know they are normally not breaded but I thought that providing a protective coating would keep the moistness in.  Maybe it will help and maybe not.

I took a brownie pan, I was only making 3 breaded and stuffed pork chops.  They are also boneless, next time I will try bone in.  They were thick pork chops and I had my butcher butterfly them.  Never asked the butcher to do things before, I guess it's part of their job.  Thank goodness because there are no prepackaged butterflied pork chops.  He was also really nice!



I drizzled some Extra Virgin Olive Oil in a brownie size pan.  Instead of dipping the pork chops in egg then breading, I rubbed olive oil on them lightly and then patted them in Italian Seasoned Breadcrumbs.  Worked well.  I held them open and stuffed them.  Now I didn't make homemade stuffing(I know, GASP!) which would of tasted so much better.  But instead I used Stove Top (Yet another GASP!).  Then I laid them in the pan.  I cooked them about 10 minutes in a 400 degree oven on one side and then I added the rest of the left over stuffing in the pan and flipped the pork chops over to brown the other side then place a pat of butter on each pork chop.  The breading provided a nice color and crisp on the edge and I think it helped coating the pan with olive oil which also added extra flavor.

They came out pretty good and were perfectly done.  Since I was feeding the kids this meal I wanted to make sure there was no pink.  I fear my kids getting food poisoning.  I've had it twice from restaurants, let me tell you, it's not fun!

*Stuffed Pork Chops, Additional Stuffing and Jiffy Corn Muffins (I didn't like the Jiffy Corn Muffins, I usually use it to make my Corn Souffle.  I thought I'd try the muffins, they were too dry, I like a sweeter more moist corn bread)
My serving platters are either too big or too small....  I need to get one that is just right for us!

*Believe it or not but the rice was Rice A Roni's Broccoli au Gratin Rice, I added Broccoli Spears to it.  My family loves the Broccoli au Gratin Rice from Rice A Roni.

So this is my recipe.  I hope it helps you, gives you pointers and make it yourself.  They were served up with a variety of dishes.  It was like Thanksgiving.  We had a carb filled feast.  We had gravy, stuffing, broccoli cheese rice and mashed potatoes and I also made some Jiffy Corn muffins.  We enjoyed a good dinner at the table.  I haven't made a meal this big in a while.  I do though think our eyes were bigger than our stomachs.  We have lots of leftovers but won't be wasted since it will make for a great lunch tomorrow with the kids.

My daughter thoroughly enjoyed her dinner and I would of taken a picture of my son but he was to busy eating.  He couldn't get enough!

*I ate and fed my son at the same time, hence the smaller plate.  I don't think he cared too much about using his sister's Hello Kitty fork to which she's out grown.

Did I mention I also made dessert?  It will be in the next blog....

Breaded & Stuffed Pork Chops
3 Butterflied thick boneless pork chops
Extra Virgin Olive Oil
Stuffing (Dressing how some call it), homemade or instant
Italian Seasoned Bread Crumbs
3 Pats of Butter or Margarine

Preheat oven to 400'F.
Coat a brownie pan with Extra Virgin Olive Oil
Drizzle and coat your boneless butterflied pork chops and coat in breadcrumbs
With the pork chops open, spoon in stuffing to top.
Place in pan and put in preheated over and cook on one side for 10 minutes and then flip stuffed pork chops and place a pat of butter on top of each stuffed pork chop and then place back in oven for another 10 minutes.
Take out of your oven and let chops rest before cutting into to maintain juices.
Serve with any additional sides you like.

Next time I do think I am going to sear the meat in a skillet and then place in the pan with some chicken broth.  That's probably the only thing I would do differently.

Homemade Sausage Gravy


I love Sausage Gravy. A perfect addition to a breakfast, on top of biscuits, toast, hashbrowns, fried breaded chicken breasts. It's such a comfort food and such a treat to have. I have had some really good sausage gravy and some really gross sausage gravy. I really love Bob Evan's sausage gravy at the restaurant. It's probably the best I've had. But I like making it at home too. I make some Pillsbury biscuits and slather the gravy on top... So comforting.... So good!


SAUSAGE GRAVY

2 lb bulk pork sausage
1/4 cup flour
4 cup whole milk or 2%
salt and pepper to taste

In a large frying pan fry the sausage while breaking it up into pieces with a spoon until browned and cooked through. Next sprinkle with the flour and continue cooking for about 1 minute over medium heat. Add the milk and cook over medium high heat while constantly stirring with a whish until thickened, about 3-5 minutes. Season to taste with lots of fresh black pepper and a little bit of salt. If the gravy doesn’t thicken enough, then mix a little bit more flour with milk and add to the pan.

Onion Straws


These are so good, crispy onion goodness. These are great on sandwiches, appetizer or as a side dish. I love dipping them into ketchup or ranch dressing. They are so great fresh and still a little warm. The best thing about them is that they are so easy to make.

1 large Onion
2 cups Buttermilk
2 cups All Purpose Flour
1 Tbsp Salt
1/4-1/2 Tbsp Cayenne Pepper
1-2 qt Oil for frying
Black Pepper to taste

Slice onion very thin. Place in a baking dish and cover with buttermilk and soak for at least an hour.

Combine dry ingredients and set aside. Heat Oil in pan to about 375 degrees.

Grab a handful of onions, throw into the flour mixture, tap to shake off excess, and push into hot oil. Fry for a few minutes and remove when golden brown. Repeat steps til all onions have all been fried.

Cheesy Creamy Vegetable Rice

My family always has to have a side dish or else dinner just isn't complete. I came up with this recipe from a mix of recipes. It's so good and such a comfort food, I could eat it everyday. The flavors are great together and it's so smooth and creamy and the vegetables give it great color and flavor. You can use any cooked vegetables you like. Adding corn or broccoli or even adding cooked diced chicken for a complete meal. I served this rice with breaded baked chicken and corn on the cob. It was delish!




Cheesy Creamy Vegetable Rice


1 can cream of chicken soup
1 can cream of celery soup
1 envelope liption's onion soup mix
2 oz cream cheese
1 1/2 cups uncooked long grain rice, then cooked according to package directions
1/2 cup water
1/2 pkg frozen peas and carrots
1 1/2 cups heddar cheese, shredded
1/4 cups freshly grated romano cheese (optional)
1/4 cups freshly grated parmesan cheese (optional)
pepper to taste
dash garlic powder (optional

Preheat oven to 350'F. Bring a large pot filled with water to a boil that has been lightly salted. Add uncooked rice and cook rice until done according to packages directions.


In a large bowl mix both cans of creamed soups, cream cheese and envelope of onion soup mix. Add 1/2 cup of water. Then add frozen peas and carrots. Mix all ingredients.


Stir rice into soup mixture and add a 1/2 cup of cheese.


Place in a greased casserole dish and place in oven until casserole becomes bubbly. Add remaining 1/2 of cheese to the top of casserole or top with crushed Ritz crackers and bake until top is browned.
